In case you’ve never heard of these before (even though it’s quite popular) zucchini noodles, aka zoodles, are just peeled zucchini shaped like spaghetti. I’d say the main reason this dish became so popular is because it’s a great replacement for regular pasta (which works for people who are gluten intolerant). That being said, it isn’t exclusive for those who are more health conscious or intolerant to wheat or gluten. I urge you to try it…yeah you, reading this.
Some highlights of eating zucchini noodles are: you won’t get that bloated feeling, you won’t feel lethargic from being stuffed, and of course you get the nutritional benefits of zucchini. The only cons that you can experience may be: it won’t taste exactly like wheat pasta and you may have to eat more to feel full longer.
Personally, I buy zucchini for the sole purpose of making zucchini noodles. Come to think of it, I don’t eat zucchini’s any other way. I do eat brown rice pasta from time to time, but when I want to eat clean I make it with zucchini instead.
You can peel it and eat it raw, but I like to sauté mine in a frying pan to give it a texture similar to wheat pasta.
So here’s a simple step-by-step on how I prepare zucchini noodles.
Ingredients:
- 2 medium sized zucchini’s
- 2 cloves of garlic, minced
- 1 green onion stalk, chopped
- Salt and pepper to taste
- 1 tbsp of olive oil

Directions:
- Wash the zucchini’s under cold water and cut off 1/4 of an inch from each end.
- Use the julienne peeler to peel each side of the zucchini. Preheat frying pan with olive oil under medium heat.
- Mince the garlic and set aside. Chop the green onion and add it on top of the peeled zucchini along with salt and pepper and mix together.
- Add the garlic to the frying pan and sauté for about 1 minute.
- Add noodles to the pan and sauté until it softens (about 3 to 5 minutes).
- Remove from pan and serve.
Super simple and easy. The prep time takes less than 10 minutes and the cooking time is as fast as 5 minutes. In this case, I ate the noodles with a pasta sauce I made beforehand and it tasted reallyyy good.
