Taco Salad
Another quick and easy candida diet dinner idea is ground beef lettuce wraps. Easy to prepare, you’re simply cooking the ground beef (or turkey, or chicken) with diced onions. Season it with dried spices like cumin, paprika, and chili powder for a hint of spice. Spoon the ground beef mixture onto large lettuce leaves and top with avocado, and any other toppings of your choosing.
Ingredients
- 1 head iceberg lettuce (or any lettuce with large leaves)
- 1 pound lean ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 cup of assorted frozen vegetables (peas, carrots, green beans)
- 1 cup of black beans, canned
- 1 avocado, sliced
- Salt and pepper to taste
Directions
- Heat olive oil in a skillet over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent and fragrant. Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and cooked through.
- Season the beef with chili powder, ground cumin, salt, and pepper. Stir well to combine and let it cook for another minute to let the flavors meld. Add the frozen vegetables and black beans to the pot, cover the lid, and let simmer (you may have to add a bit of water to the pot so it doesn’t dry out).
- Wash the lettuce leaves and pat them dry with paper towels. Arrange the lettuce leaves on a serving platter.
- Spoon the cooked ground beef mixture onto each lettuce leaf, dividing it evenly among the leaves. Top the beef with your sliced avocado.

- 1/2 cup Brazil nuts
- 1/4 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
